The Best Gluten-Free Mini Pancakes with Chocolate Chips
My family and I absolutely love these GF Chocolate Chip Pancakes. They are so deliciously sweet and good, light and fluffy, that they don’t even need syrup!

Since my youngest daughter is allergic to gluten AND eggs, it was hard to find a gluten-free, egg-free pancake recipe. So, after searching for the perfect GF pancake recipe, I ended up creating this one after experimenting with different basic recipes. I hope you enjoy it as much as we do!
Yield: 10 small pancakes
Ingredients
- 1 1/4 Cup All-purpose gluten-free flour
- 1 Tbsp Baking powder
- 1 Tbsp Turbinado Sugar
- 1/2 tsp Salt
- 1/2 Cup Chocolate Chips
- 1 Egg or egg replacer
- 1 Cup Buttermilk or dairy-free milk
- 2 Tbsp Butter (optional)
Mix the dry ingredients and set aside. If using the egg replacer, prepare equivalent of one egg and set aside. Next, prepare the buttermilk or dairy-free milk. Whisk wet ingredients and add to the dry ingredients. Whisk to combine and then let rest while the griddle or pan heats.
Butter the pan or griddle if desired and then pour 1/4 Cup of batter onto the griddle for each pancake. Let cook until they begin to bubble on top and they are lightly browned on the bottom. Flip and cook other side until golden brown. Serve & Enjoy!
